My dehydrator trays appear to have similar size mesh as the frog mats. The only time the meat sticks is when it gets pressed into the mesh. Otherwise there is no stick. So not sure if the frog mats would help, but they certainly might.

Not sure I follow you, but no nothing prevents the air from the underside.
