Spent the day making jerky

Following my sausage thread, today was jerky day. I went with a tried and trued mesquite flavor packet from walmart that is actually really good and a new Dr. Pepper jalapeño recipe I got from YouTube. The Dr. J still needs some tweaks, mainly salt and sugar but isn’t terrible. I also got to test out my Walmart clearance dehydrator that I got last year for $20.

Reducing the Dr.Pepper/jalapeño and spice reduction yesterday evening. It needs to cool before marinating.

I slice muscle groups while still partially frozen and start marinating the night before.
The first batch was on at 0700 today.
 
The round trays are the old dehydrator and the rectangular are the new with the Dr. J.
As usual the mesquite are very good. The Dr.J aren’t as spicy as I thought they would be after making the marinade and suffering through watery eyes, they do need some sweetness.

I called it quits this afternoon with one more batch of the Doc J’s that I added some Japanese bbq to. We will see.
