Here is what I did with last years goose. Breasts stuffed with goat cheese and spinach and then wrapped in bacon.

I have never had goose(wild or farmed), but DAMN that looks and sounds(might event be able to smell it through the screen) tasty!
 
Looks good. So did you fully cook in skillet or partially in the oven?

Just browned/crisped the bacon and then finished in the oven (350 for +- 20 min). I would have left them a little less "done" myself but that wouldn't swing with mama. Goose taste was pretty strong, it is very rich comparatively.
 
I won't eat goose anymore unless its served medium rare. Cooked any longer and its like eating liver and it don't matter what it get's smothered in...
