Chorizo Recipes?????

Does anyone have a good Chorizo recipe that they would not mind sharing with me. I would like to make some with ground elk..... Thanks

This guy processed a bull for me in'01.

He asked me if I wanted chorizo, I said " never heard of it"

He says you'll like it, so I got some made along with the usual stuff I get. That was awesome, mixed it with eggs or made burritos out if it. Good stuff.

I couldn't find the actual chorizo recipe, thought if you were interested he may email it.

No recipe, though I do have a source to buy it at a slightly upscale grocery chain for when I make paella, and you're right in that it beats the heck out of the Mexican mush.

I can't remember the name, but there's a store bought brand sold in the Boise area that is great! Not as good as the homemade one's I've been lucky to enjoy from some Basque I know in ID, but they are very tight lipped about the recipe. If I think of the name I'll pass it along.
