I can’t say I’ve eaten a lot but have eaten a few fried fillets and made a couple batches of gar balls. I would happily trade a equal amounts of rabbit for a mess of gar meat to make gar balls with.

In Texas when fishing drainage ditches I would spot them at the surface and through a topwater bait with good hooks and really set if they bite.
In HS used to catch them all the time, live bluegill 1-2 ft below huge bobber....leave w the bale open....let them run when they take...looks like Jaws swimming away....then a giant hook set and hang on.
Worked really well and a fun way to kill some time on the dock by the lake....
