Well it's that time of year again hunting season has come and gone and the weather is still nice and cool so this past weekend me and my in law's got together combined our venison scrap for the year and commenced to work.

We made 15 lbs of bacon burger, 100 lbs of Hamburger, 25 lbs of Bratwurst, and 50 lbs of smoked sausage which I failed to get any before and after shots of by the time we got it in the smoker. Another year is now offically in the books.

We do have about 50 lbs of scrap left to make some more bacon burger and brats with.
Venison is an important part of our familys diet and makes up about 95 percent of the red meat we eat.

Looks good! I have some elk to do the same to. Already did 137 pounds of burger, but now need to do the sausage.

Burritos are made fresh regularly. We still have a bunch of jerky to make and I am toying with the idea of making some tamales but I have not jumped off that deep yet.
