well I found I think a couple of ways too use all the ducks and geese I harvest every year, I found that grinding them up and using Hi-Country seasonings from Sportsman's warehouse is the way too go, made some Smoky BBQ jerky in the Big Chief Smoker and it is pretty good that was all the duck I had, and took all the goose I had and did the same except in stead of jerky I did breakfast Sausage seasoning and its pretty good, not disappointed at all, you just have too double the seasoning that is recommended for the amount of meat you are using, but that's only if you use straight duck or goose, you can dial down the amount of seasoning if you add say pork or beef trimmings/fat too it....

sounds good. I'm thinking of buying a new grinder this week for this very purpose. I'm looking at the LEM's, they seem to be pretty good. What do you use?
 
Have you tried the Hi Country Summer Sausage kits? I have been wondering how they would turn out made with duck or goose.

Rut Junkey, I have a LEM #8 that I've had for 3 years. I 've processed 1 elk, 6 antelope, 5-6 deer, and some odds and ends of beef or pork. Its been a good buy, I will buy another one when it goes out. I do want to add a sausage stuffer though, its alittle bit of a pain to stuff cases with the grinder.

Excellent Foxtrot, that is the one I was looking at and they are getting ready to go on sale the first week of December @ a local store. I will be buying one soon. Thanks again.

I have not tried the sausage kit, just the seasoning.... I will be looking into the summer sausage kit thou... another thing i'm going too try with the duck and goose.....

FYI remember to be meticulous with making sure you get any and all shot out of your birds before you grind them. I've chomped down on my share of lead shot in pheasants so I can't imagine what steel shot does to grinder blades. :eek:
