What's everyone making tomorrow? Got some shanks thawing now I'm gonna smoke and throw in the crockpot with some birria sauce. Gonna used the shredded meat in nachos along with homemade queso, and refried beans. Think I'll also make some finger BLT sandwiches with.20260207_151010.jpg

What a timely post a big slab of beef ribs. I was just going to ask you how long i should plan for on them.
If it were me I'd throw them on a the Crack ass of dawn, wrap them around noon, and I bet they'd be off by kick-off. Even if they're early wrap them in a towel and throw in a cooler will keep no problem 2-3 hours.
 
After a bit of deep thought I’ve taken the following out of the freezer.

3 whole squirrels
6 bluegill fillets
1lb venison burger

I also made a simple brine that is currently cooling to room temperature.
This should be featured in the pregame tomorrow!
 
Mom requested/demanded our presence at church this morning. First time she got to show off the new grandkid. We were there forever and I got a later start on the shanks then I wanted. Put them on the smoker before I left around 9am and just got them in the crockpot. Made my homemade birria sauce toasted ancho, hatch, couple arbol chillies, with sautéed onions and garlic, cumin, oregano, cinnamon, can of whole tomatoes, 6 cups beef broth, and a splash of vinegar blended together. Pour till just over the shanks and normally cook on low 8 hours but gonna have to do high for a couple hours to be on time today.20260208_111650.jpg20260208_114059.jpg20260208_114209.jpg20260208_114235.jpg
