I would look at the Kwik Kamp stoves. I built my own 7 years ago based on the Inferno model to their specs. It works very well in my 12x18 tent and it will burn all night if you use good dry wood, I always use a mix of Fir & Alder.
A few meals that are always on my menu are steak fejitas,chinook salmon with fried potatoes & green beans. Prior to the trip I put a roast on the smoker with hickery & cherry or apple wood,This is for the french dips, They always go over well.

If you are set on going with a plastic window go with the velcro and put it on when you want.Plastic windows should be rolled up when stored not folded.
If you cover your tent with a tarp use a white tarp,this will help alot unless your tent is a dark color,I hope this helps.
