What's on the smoker today?

Whelp, went to the gym & left em wrapped (foil) a tad too long....tasty, juicy, & tender but not much pull.

I like em where you can't pull the bone out & slice evenly. About 80/20 Blue Hog/Apple Cider Vinegar, couple squeezes of honey. & some woodfired garlic, black pepper stove top heat blended...generously doused baby backs on a paper plate.

Just realized I put this on the smoker thread. Meant to do the plate em up thread. Habit I guess although I did smoke a pork shoulder yesterday where I got the meat for the carnitas.
 
A couple of good friends got back last week from a salmon fishing trip on lake Michigan. I was originally suppose to go but after lucking out on a August antelope tag in NV, a new baby in July, and a full fall ahead I just couldn't swing it. Fortunately they took pity on me and shared some of the love. This is a piece of Chinook salmon that was swimming in lake Michigan two weeks ago and it's the best piece of salmon I've ever had.20250829_120500.jpg20250829_183003.jpg

My neighbor keeps me supplied with chinook. Seriously good salmon with almost a buttery texture and taste.
 
Leftover party ribs from last night. Smoked a chicken too.

I did a terrible job of taking pictures this weekend.

Working a double (technically a triple) shift on Chicago's north side. 5 hour between shifts. Too far from home to make the drive back, so I figured I'd try a local BBQ joint. These folks could use a field trip to Oklahoma.
Gonna be in Memphis next summer for the first time. Hopefully I won't be disappointed.
