What's on the smoker today?

When we get our hog cut I get one side in pork loin roasts rather than chops. Have one on the smoke today. Will pull at 140 or so.

Damn that looks good. I'm thinking we're
gonna keep two hogs for ourselves next year and grind a lot less. We always end up with too much grind.

Will do. I think about it every time I fill out my cutting order just never have. How do you cook them? Everyone thinks I'm crazy but beef cube steak is probably my favorite meal. Sautéed in ro-tel.

I love cube steak. One of my favs as well. I either slow cook them in gravy or do a chicken fried deal. They also make a great fried pork sandwich. Pickles and some lettuce and mayo.

If you don't mind tomatoes or green chile, give the Rotel a try. Brown them then dump the Rotel in and Sautee and serve smothered in the tomatoes and chiles.

It was ground elk that I used!!

Venison pastrami. Followed the wildgame gourmet recipe. I did 3 roasts at one time. They came out fantastic!

Made 20lb of snack sticks today plus 5 pounds of jerky. Knocking out my sausage pile 20lb a weekend have 60lb done so far 60lb more to go. Just put on a Brangus Tri-Tip for dinner.
