Had the smoker at 275-300 degrees. Not exactly sure how long 40 minutes to a hour pulled it when it probed 130 degrees.

Elk back strap smoked to 110, then seared in a cast iron pan.

Probably my favorite meal of all time.

Did a pork shoulder chunk yesterday on the PB smoker. 1st attempt, off the cuff.
Smoked for 6 hrs @220 then wrapped in foil and cranked to 350 to get heat on meat to 205. Rested an hr while I made mashed taters , mushroom gravy and spinich.

Rio approved. Not too shabby.
