Summer sausage

My dad said he had a hell of a time getting the meat into the synthetic casing. Drove him crazy, says he needs help. Does anyone have a rec of how to stuff the casing quicky with no mess? Do you make one large sausage and cut it up later or do you cut the casing into smaller sizes first. We are new at it.
 
If you have a jerky gun you should be able to use that as well. They are usually skinny enough to get into the casing and you can pack it good in the casing with the gun instead of trying to do it with your hands.
