Every year we buy animals at local fairs to help out the young men and women showing animals. One young lady gave us a 'thank you' with some crackers and dip. The dip was really good and I thought it might be good on steak as well. I've used it a couple of times on elk steaks shortly before pulling off the grill and resting them, even my wife seemed to be a fan. Do you guys top steaks with cowboy butter, onions, shallots (everyone should use lots of onions and shallots in my biased farmer opinion) or other toppings, or just meat as God made meat? I've got some strange taste preferences, but my wife liked this one too, I think it's worth a try. So, do you top or not?

Season, top, something. Maybe the boredom comes with the territory of having raised cattle but plain/salt-only steak just has no appeal anymore. Steak in general, really.

However, when I was at the US Embassy in Moscow, I got a taste for "tsar style" steaks they served in a nearby restaurant. Nice grilled steak (usually a piece of a ribeye at this place) topped with a melted hunk of mild white cheese, some kind of creamy sauce, and some herb/dill mix sprinkled on top. I ordered it that basically every time I went there. But then again their generally quality of meat was a lot higher than ours, but that's a different conversation.

I mostly pan sear mine these days in cast iron. Baste them in brown butter at the end, with a few crushed whole garlic cloves and often with thyme and/rosemarry as well. Also love a good au poivre sauce on occasion.

Lately, no. Mainly because I'm lazy. But I do enjoy a pile of sautéed mushrooms and onions!
We just took my 8 year old to Texas roadhouse last week. First time we've been in over a decade. He devoured my mushrooms with his steak. Finally someone else in the house that likes them. NY strips and sautéed mushrooms on the menu tonight at home!!!
