Roasted Caribou - Wife made it for me yesterday

actually added the Caribou last so it wouldn't get overdone - browned it in a skillet then added to the roasting pot,,,

it was ever loving good

the "texas toast" was good as well (not really made in Texas, so please, no lawsuits from the Texas Pete hater in california)

The morning after coming out from some snowy country with a cow - made some basic elk and eggs with homemade sourdough and tomatillo salsa. The elk was trim from the chain of the back strap. 2 yello spuds, 1 red spud. Fry till soft in a 1/2 stick of butter. Remove from heat but keep warm. Quick sear on a fresh, whole elk tenderloin and fresh heart with the other half stick, salt, pepper, and garlic powder. Real quick and keep juicy. Add the tenderloin to the spuds and cover. Let the elk juices steam down into the spuds. Only addition that we missed was the eggs to throw on top. Haha

Oh yeah….. pair it with a sipping cup of your favorite hunting whiskey and…….

Gourmet!!!!

Edit to the edit. Haha. Works best with a fresh animal and doing it fireside. 🤣
