I drew a tag. Can I get your GPS coordinates for the biggest elk in Mongolia? Just kidding,are there even elk in Mongolia? John Cushman got me craving Chinese last week so I set out to make some at home. I ran across a recipe for Mongolian beef and adapted it. I came up with this:

1.5 pound elk roast sliced about 1/2 inch thick
1/4 cup corn starch
3/4 cup soy sauce
3/4 cup water
1 glob of honey
3 cloves of garlic
A few shakes of crushed red pepper
2 carrots sliced into about 1/4 inch x 2” slivers
1 head of broccoli
Chives
Rice
add sliced elk and cornstarch to zip lock bag and shake to coat
Add elk, soy sauce, water, honey, crushed red pepper, and garlic to crock pot
Stir to mix ingredients
Cook on high for 1.5 hours
After 1.5 hours add carrots and broccoli
Continue on high for 1 more hour
make a bed of cooked rice spoon Mongolian Elk mixture on top with plenty of the juice
Garnish with the chives
