a guy was telling me how to get rid of gaminess and it really worked.cut the hog in cubes or quarter invh slices. then just soak them in worcestshire sauce and salt and pepper overnight.wrap each peice in bacon and cook on the grill until the bacon is crispy.i tried this and it was really good.
