Friday night fun.

I've never eaten them before. How do you prepare them?
I fillet them cook in a skillet "blackened" with some caramelized onions. I have deep fried them, fried fish just doesn't agree with my stomach anymore, but taste great that way too. Everyone I have fixed them for love them.
 
Moved away from where I used to catch them but I'll have to keep one and give them a try the next time I pull one in
 
No cat fish but the river perch aka drum were bitting. Does anyone eat these other than me?
Love them. But they're tough, so you can't deep fry a whole fillet- chips cut against the grain are pretty decent, and cook really fast.

Drum are perfect on the grill, blackened, in a creole/etouffee, or slow-baked in butter and onions. But I like blackened.
