I save all the parts of my ducks that I can. With the season about to open up for us here in the south it's time to make room for this year's harvest. I broke out my copy of Duck Duck Goose and found this gem of a recipe
Now it calls for wings but I threw leg quarters and wings in this recipe.
this dish was in the cast iron on the stove top all afternoon coming together with love and goodness
shredded the meat and it was fall off the bone tender then added it back to the pot with the caramelized onions, celery, and carrots.
let her simmer
for another 30 minutes and sauteed some mushrooms on the side as some in my house arent fond of the fungi. Gents if your tossing you legs and wings it's a bad idea
