I save all the parts of my ducks that I can. With the season about to open up for us here in the south it's time to make room for this year's harvest. I broke out my copy of Duck Duck Goose and found this gem of a recipe20191116_150321.jpgNow it calls for wings but I threw leg quarters and wings in this recipe. 20191116_143439.jpg this dish was in the cast iron on the stove top all afternoon coming together with love and goodness20191116_174850.jpgshredded the meat and it was fall off the bone tender then added it back to the pot with the caramelized onions, celery, and carrots. 20191116_175136.jpglet her simmer 20191116_184601.jpgfor another 30 minutes and sauteed some mushrooms on the side as some in my house arent fond of the fungi. Gents if your tossing you legs and wings it's a bad idea
 
These leg quarters and wings were from various species. Ring neck ducks, black bellied whistling ducks, teal, and wood ducks. From the shredded meat picture you can see the possibility for pulled duck BBQ sammiches or Street tacos. Just sayin fellas I dont get the green heads down here like most if yall do.
