2 1/2 lbs venison or elk steaks
2 medium onions 1 cut into chunks 1 diced
1/4 c butter
salt & pepper
1 envelope taco seasoning
1 c water
1 large can refied beans
16 (8 inch) flour tortillas
12 oz shred chedder cheese
12 oz shred co-jack cheese
1 jar salsa
shredded lettuce
diced tomatoes
black olives sour cream
Arrange cubed meat in single layer in shallow baking dish. Cover w/onion chunks, & dot w/butter & season w/salt & pepper. Cover w/foil & bake at 350 for 3-4 hours. When done shred meat w/fork, add taco seasoning & 1 cup water, mix & return to oven for 30 min. Warm beans & diced onion in pan. Lay tortillas out & add a healthy layer of beans, then meat & a handful of shredded cheddar. Roll deeritos & place in shallow baking dish. Cover w/salsa & co-jack & bake at 325 for about 1/2 hour. Serve w/lettuce, toms, olives, & sour cream.
This is soooo, good & will feed 4-6 people.
