Yellow to orange, gelatinous looking fat is catabolic fat. It’s a sign that the body is breaking down that fat to meet energy requirements rather than meeting them through food intake. Common in rutting and post rut bucks, but also common in animals with injury or disease that prevents them from foraging effectively.
The diarrhea could be a sign of a recent diet switch, or an overly dense diet. I’ve seen town deer eating a mostly corn diet get bad diarrhea from the overabundance of carbs. At necropsy, their stomachs and intestinal linings are red, inflamed, and sloughing off in some places. Lots of that yellow fat because they aren’t absorbing the nutrients effectively anymore.
There are bacterial diseases that can cause diarrhea, but you would usually need to send in tissue or serum samples to tell that. Your buck looks otherwise healthy in your pic. Could just be indicative of a change in diet.
