You should be able to flush that out with a spray bottle of some sort. I’ve had critters where that didn’t happen, and others where it sticks in there and has to be flushed.

Is it best to break the bone while it’s warm and pick it out? I assume that stuff shouldn’t be left in there?

Easier to do it warm IF you have to.

I’d try to flush it. Garden hose, water bottle with a pin prick through the lid. Something to get some water under pressure in there.

I’m a little bit worried about keeping it in water at this point because the joints on the face are beginning to pull apart a little. I’m gonna have to figure out how to poke it and then flush it. I sprayed the pressure washer inside of it and it didn’t come out. It’s like it’s its own sealed cavity ha ha!
 
I think you’re seeing the mucous membrane lining on the deep sinus bones. Can be hard to get out. Sometimes you can scrape or rub it off with a needle tool or something, or flush it with a strong stream of water. There’s often something left in the sinuses, and the brain cavity. There will also be stuff left in all those little openings where nerves/vessels go through. Not the end of the world. It will bleach up mostly, but might smell for a bit. It will eventually dissipate. If the bones are warping or separating, stop with the heat. It’s just going to get worse.

After you bleach it and it’s dry, spraying with a satin or matte clear spray can help seal it and keep the smell down.
 
Looks pretty good for your first Euro. Agree with @Hunting Wife , probably sinus membrane. I get a lot of that out by grabbing the antlers and shaking the skull with the nose down. Try to make it stop violently without smashing the nose on the floor(wrists hitting knees) or something along those lines. I have had skulls hard to get all that out especially those that were hung head down and the blood allowed to drain into the sinuses. All good after the smell dissipates in a couple weeks(don't want to take it into the house right away).
 
For future reference, I find that sinus membrane easier to remove when it hasn’t been over simmered. The longer it goes, the mushier it gets. I’ll usually simmer a couple hours, pull off whatever I can like the bigger chunks of muscle, and work on the nose. That main cartilage septum and a lot of the cartilage on top and back of skull will take more simmering, but I can often get those sinus membranes to slide out in one or two big pieces and preserve the turbinates. Then simmer a little longer to get those tougher tissues to soften up.
