Rolling boil will loosen up all your bone sutures and the bones will start coming apart. Might partially be why your nose pieces fell off. If things start getting loose, or you start seeing gaps at the nose, you’ve gone too far.

You can glue them back on. Do it after you bleach. I just use plain old Elmer’s glue, and hold the pieces in place with a rubber band. It dries clear/whitish and matte, so unobtrusive visually. If you glue before you bleach, you can end up with dark spots where the glue prevented the bleach from doing its job.

Yes, you can simmer again to soften tissue back up, but it sounds like you’re close to overdoing it on this one so you’ll have to be careful.

I still have grisly pieces of meat that haven’t fallen off and I tried picking it off and it’s not coming out. That’s why I’m wondering how far you go? Is it all supposed to just come off easily?

where are these pieces of meat?

finalizing a euro i've always found to be a chore. lots of picking with small screw drivers, knives, and forceps. some good extra stout brushes are nice too.

DIY euros will really turn a person into a "%$^& this, good enough" type of individual.

give it a long warm soak in the 130-150 range and do some more picking and spraying with the hose. a peroxide bath in the 130-150 range can often take care of the last pieces for you.

i've become a big fan of screw eyes and simple hooks in an anchor.

especially depending on your preference. i like euros flat agains the wall.

The gristle on the back of the skull are especially difficult to get fully removed, not really necessary.

I used a dremel with a mini wire wheel to get rid of that bit of sinew attached to the top of the back of the skull.

I scrape it off, either knife blade, forceps, fingernail sometimes. I have an old pocketknife dedicated for this purpose. I have a nylon bristle brush I use sometimes. I’m pretty meticulous and spend quite a bit of time. Usually scrape my knuckles up. Lots of cussing helps.

I’ve noticed that leftover cartilage and tissue will discolor sometimes in the bleach, and can yellow over time.
