What's on the smoker today?

Smoke my first pineapple. Cored and rubbed with brown sugar and Ta’jin. Honestly can say this is mind blowing. And even better the next day. Used a pan as I didn’t want that gooey mess on the floor of the smoker. 250 at 30ish minutes.

I'm going to have to try that looks amazing.
 
Saved the legs, thighs and wings from our Christmas Turkey, cured them this week and giving them an all day smoke today. Will freeze them and use them in beans, greens, bigos or gumbo throughout the year.

And for dinner used one of the wings in black-eyed peas and collard greens, with a dab of hot pepper jelly on top:
