Nope smoked them for around 2 hours then finished on the grill for a few minutes to get the skin crispy.

21.7lb brisket. Was fantastic, “Girls Weekend” at the ranch when my buddies bring their daughters and my daughter brings her friends too. A dozen 10-16 year old girls. Lots of happy eaters. Made 4 dozen jalapeño poppers and a pile of chicken too, but the brisket was far and away the favorite.

Going to pull the smoker to town and do a BBQ fundraiser Saturday for my kids little league team. Planning on smoking 6 shoulders and hoping to make around a hundred pulled pork sandwiches. Just picked up the meat.

That's cool. Some of us parents used to do that before every home game of my son's high school football team.

Man I really slacked on pics we were so busy plus trying to keep a eye on the kids. Sold 104 sandwiches, around 80 hot dogs, and a unknown quantity of baked goods. We raised almost double our goal and should have the team set for the season.

Smoked chicken wings and poor man's burnt ends this weekend. Used a chuck roast instead of a brisket. Exactly the same? Not quite, but they turned out very very well

Another one that won't break the bank is a eye of round road. I'm doing one today smoke it for 3-4 hours on low then finish on the grill with a reverse sear after it rest o chill it then slice it thin. Makes amazing sandwiches.

Not sure how I still managed to have an elk tenderloin this far from last season. Great treat I got to share with a longtime friend I haven’t seen in a long while and another guy who never had eaten before. It was hit!

Smoking two racks of ribs and getting some quality time in with the kids before I leave for the first hunt tomorrow. Normally just use apple juice but trying a little different for the spritz today.

Do you still spritz if the smoker has a water pan? And have you noticed any difference between spritzing /no spritzing?

Yes and yes.

My experience, yes, still spritz with a water pan. The pan helps keep the heat even, but doesn’t really help with moisture in the meat. Plus, spritz adds some flavor and bark.

I guess I'm off to get a spray bottle and some apple juice. Every hour? 1/2hr?
I just put 4 racks in, doing the 3-1-1 method..
