What you all cookin for Christmas Eve and Christmas Day

Per usual - posole with red chile today with the extended family midday. We then made my daughter’s favorite for tonight - slow cooker carnitas for tacos. Tomorrow it’s French toast in the morning with the kiddos and then grazing all day before some big ribeyes for dinner. 70 in Denver tomorrow?!?!? Will be nice to fire up the grill.

Red posole is my favorite thing to make on Christmas Eve. We made some with bison shoulder today.
 
Christmas eve was homemade pizzas and a great spinach salad.

I make a legit scratch red sauce with anchovy in it for one and pesto for the other.

Pizza 1: red sauce, fresh mozzarella, fresh minced garlic, thin sliced onion, pepperoni, fresh roasted NM green chiles

Pizza 2: pesto sauce, goat cheese, kalamata olive, onion.

Christmas dinner Lobster tails, elk lion and sides.

Homemade pizza tonight for me too. Although we took the easy route with jar sauce. Elk pepperoni, onions, mushrooms, pepperoncini, olives, and bacon with red sauce on one, buffalo chickie and blue cheese with celery, mushrooms, tomato, olives, and bacon on on the other. Tomorrow prime rib on the smoker.

Well, for the first time ever, my MIL wants to have prime rib!
Funny, because she literally won’t eat meat at all if it’s not charbroiled to crumbly, tough perfection… I suggested I do a twice smoked ham….? She insists on a prime rib for Christmas. I’ll try and remember to let yall know how it turns out. I told her I’ll be doing a ham either way 😉
I would not give one micro second of consideration to any fool that only eats overdone meat if at all, regardless of family relation. Cook her a thin tortured crispy breakfast steak and serve a perfect prime rib for normal people. Guess we may hear after tomorrow how she balks at the beautiful rare prime rib she insisted on.
 
smoking brisket. One of my favorite gifts each year is being able to have enough people gathering to justify smoking such a big piece of meat.
Heck with that. You deserve better. I smoke a few throughout each year at least and maybe once per year among those for a crowd to eat day of. smoke brisket freezes fine! and make a great ingredient throughout the year for other dishes ( scrambled eggs, taco, chili, stew, sandwiches….) in addition to being great warmed for another brisket meal. Freeze in big hunks and not sliced in advance for best results, but the main thing is don’t wait for a crowd to justify smoking a brisket.
