1 1/2 lbs venison, ground
1 15 oz. can refried beans
2 10-oz cans enchilada sauce
6 flour tortillas (burrito size)
12 oz. or so of grated cheddar cheese
or taco cheese of your choice
3 T.oil
sour cream
1 can of olives- sliced
In frying pan, brown venison in oil. Add refried beans and 1/2 can enchilada sauce. Mix well and set aside. Grease 2-9inch pie plates. Place tortilla on bottom of each one. Layer each twice with 1/4 venison, 1/4 cheese. Top with tortilla, 1/2 enchilada sauce and 1/4 cup chees. Cover with foil and bake in a 350 oven for 30 minutes. Serve with olives and sour cream. Or bake wityh olives in it. Green chiles make giood garnish or Jalapenos if you like it hot. Enjoy.
this is good with elk or other ground.
