How long are you hanging those birds before they’re dressed?

I hang my turkey for at least 24 hours but up to 72 hours before I pluck it. I gut mine first before I hang it in my beer fridge, but some people don’t. Hank Shaw talks about the benefits here: https://honest-food.net/on-hanging-pheasants-2/.
