I think that's great !!! However, probably won't find a class of that type on the curriculum in LA or NYC ...
 
My Son in Law used to teach at a private school here in Oregon. The science teacher at that school was an avid hunter and he would bring his kills into class and have the kids skin and cut them up. It was a good way to teach anatomy while getting his deer processed without getting his hands dirty.

My 7th grade science teacher did the same thing. He would also have a venison lunch for his students. That was the only time I've ever had a venison burger with venison fat used as the binder. Sort of like eating a melted candle.
