I've had this Wakui 180 mm (7-1/4" blade) Kurouchi Santoku for a bit over a year, but it's just sat. I have a 180 mm Sakai Kikumori Bunka that is my go-to, and this is just too redundant. I've decided I need a 165 mm Satoku instead.

The maker is Toshihiro Wakui, a third-generation Japanese blacksmith from Sanjo, Niigata Japan. One of my very favorite Japanese makers.

Purchased from Japanese Natural Stones (In Denmark) in August 2025, it has never been sharpened. It's immaculate.

The blade has the typically gorgeous Wakui distal taper which starts out at 3mm thick and tapers to a very fine point.

It can be seen here: https://www.japanesenaturalstones.com/jns-wakui-kurouchi-santoku-180mm-nr-2/

Blade core is White no.2, a carbon steel that is sandwiched between an outer layer of soft stainless.

Handle is Japanese Magnolia with a buffalo horn ferrule.

Blade finish is "Kurouchi" or "blacksmith finish."

Comes with its box.

THIS IS A HANDMADE KNIFE.
