The unlabeled vacuum sealed bag at the bottom of the freezer turns out to be antelope pastrami!

The shot hit the front shoulder, which took a bit of a beating and when I was processing the antelope I dealt with some bloodshot meat and kept the pieces together for a Hank Shaw inspired treatment.

Perfect for a nice 100+ degree Sunday carb-less lunch.

While the cheddar jack was good, the better pairing was to the baby Swiss cheese.
