My wife and I will be in North Dakota at the end of the month over Memorial Day for a few days. We'll fly into Fargo and will be staying in Grand Forks. Anything that we should plan on checking out within a 2-3 hour drive? Any good restaurants, breweries, etc. in the area worth stopping in?

Grand Forks isn't a terrible food town. It's got a good mix of "nice" restaurants ("The Toasted Frog" and "Harry's" are solid) but the collection of places that serve "working mans food" is where the town thrives. Darcy's Cafe for breakfast, the Broken Drum is a solid lunch spot, Red Pepper is a neighborhood staple, and parrot's cay has very good wings. JL Beers has a great beer selection and serves a really good burger (always with the fresh cooked chips as a side).

Local tourism... not where the area thrives. But, if you are in town on Thursday the 21st, you could check out the races at the Red River Valley Speedway. Sprints, mods, etc. It is pretty good racing.

That week is a little on the early side for the best cat fishing in the red river but there are some really good guides (Brad Durick) in the area that can take you out after channel cats. The area is known for trophy channel cats.

It is flat... really flat. You are going to find a lot of farm land in essentially every direction for 2 hours from Grand Forks. Canada is only an hour from Grand Forks, but it is pretty much like North Dakota with worse roads.
 
Ive been wanting to ride mtb in Theodore Roosevelt grasslands. Just never seem to get there.
Umm, Teddy was a little more than two hours from the Minnesota side of state. Although the presidential library grand opening is July 4th I think.
