so I lucked into a cancellation Woodland Caribou hunt up on Newfoundland. Guided yes, such is life if you want a Woodland Caribou. Had a lot of hoops to jump through to cross the border last October, but got it done. Lucked into him the second to last day of the hunt. Had passed up a few others. Not a world record, but it sure eats good! I love caribou and have only hunted them twice so far (other was a Quebec-Labrador before the herd crashed) so now I guess I need to plan another caribou chase.

anyhow, wanted to share a fun hunt

How does he taste?

excellent - prefer it to any other game meat except sheep
I describe it as a sweet tasting meat, very good with few spices needed.
the folks up there told me "you won't like it, it's the rut and meat is nasty" or words to that affect - well some may turn out that way, but this young bull wasn't nasty at all
