Always looking for something new to break up the same routine. Any one have a favorite recipe for cooking up your favorite deer, elk, antelope e.t.c steaks or roasts.

Trying something in the cast tonight we'll see how it goes.
 
Sky is the limit. Grilled steak for fajitas and tacos, roast for pho, stir fries, shredded for enchiladas, burgers, meatballs, Thai food, all depends on your resources and ambition.

A garlic and green bean stir fry is easy and always tough to beat. Throw in some extra chiles and go five star on heat.
 
Something I haven’t seen a ton of that I like to do from time to time is take sirloin and do Philly cheesesteaks. Slice it against the grain before you cook it, then cook it fast and hot. Sauté your diced veggies before cooking the meat. Once the meat is just about ready, combine it all on medium heat. Add Worcestershire and soy sauce, then provolone. Mix it and melt it. Serve on toasted hoagie with mayo. Boom.

let come to room temp
Pat dry
Liberally coat with fresh cracked pepper
Get cast iron smoking hot
Sear two minutes per side, seasoning well with Johnnys, or even better Tony Chacheres cajun
Add some garlic butter on top
Let rest covered for 5 minutes

Phillies! How could I ever forget that thanks broadening my horizons!
 
I like to go bold some days, curry venison with naan bread, we like it a lot!

Another good option i go to is pulled venison, same as pulled pork except use deer.

Either of those always gets a thumbs up from me and the GF!

Jonas' Elk in brown sauce
Hot cast
Melt butter
Sear steaks a couple minutes each side
Remove and cover in foil
Add green onions and mushrooms to drippings add a little butter if needed
Stir in some beef broth bring to boil
Add cognac 3oz is what I used
Stir in a 1/4 dijon to thicken sauce
Return steaks and cover in sauce let simmer a bit so the juices mix

Bingo

Served tonight with baby Yukon and onions alongside steamed veggies.

Cognac is the trick

This is my favorite way to eat elk meat. (Besides wrapping the back-straps in bacon)
Grilled elk fajita recipe

Special equipment
Grill, cast iron pan

Ingredients for the marinade.
1/2 cup soy sauce
1/2cup lime juice
1/2 cup canola oil
1/4 packed brown sugar
2 tsp cumin seed
2 tsp black pepper
1 table spoon chili powder
3 medium cloves of garlic
2 pounds of elk steak cut crosswise into 5-6 inch pieces.
1 red bell pepper
1 yellow bell pepper
1 green bell pepper
(Peppers de-seeded and sliced into strips)
1 onion (cut into 1/2inch slices


For serving.
Tortillas
Optional
Guacamole
Pick de Gallo
Sour cream, cheese, salsa

Marinate the meat and veggies in gallon ziplock bags overnight or longer.
Cook on the grill on low heat till the meat is pink in the middle.
Cook veggies on cast iron pan over grill.

I Love my elk and deer seared with a dry rub by BeardBQ. A South Dakota based company. Great dry rub. Crusts up real nice.
 
Try to beat your steaks both sides season toss in the cast iron.a really slow simmer for 30 min in a Few cans of cream of mushroom soup. some Jasmine rice is always a fav of mine.
 
Swiss steak mushroom style:

One of the 'less desirable' steak cuts, such as rounds, bring to room temp
Put them in glass baking pan or dutch oven, fully submerged in a mixture of: cream of mushroom soup, dry onion soup, generous amounts of thyme, oregano, and garlic, splash of bone broth
Bake low and slow (hour-ish at 350 maybe?)
Make some mashed potatoes
The steak will be great but holy hera is that gravy amazing
