More Meat for “Sausage Fest ‘19”

Took my daughter’s corgi out for a quick pig hunt last night. My buddies n myself r getting together in a few weeks w all of last years meat n having a sausage making party. Nice pig. How good is mixing wild pig with deer for sausage? I always figured it would be too learn to use as a mix or even by itself.
 
Just like any meat; wild or domestic, depends on the animal. This pig was taken off of a very agricultural area, so he’s had good eats all his life. He has good fat, clean meat, dispatched quickly, hung/skinned/gutted within minutes of him hitting the ground n chilled all night.
One of my favorite ground meat mixes is 2/3 venison, 1/3 wild hog
 
Looks yummy! Used to do that every year with friends. Then we all had kids and now we’re too busy and lazy and take it to a processor lol.
 
Back in my rugby/college days (late 80s early 90s) u couldn’t find it around here so we would have to make regular runs out that way to “stock” up!!!
 
Made liver n onions w him yesterday!!! If u have never had feral hog liver ur missing out!!! Milder than any calf liver
