Montana Mountain Goat

I had a perfect goat hunt in 2022. It was awesome. I won’t apply for a tag again though mainly because the meat was so terrible. I killed a 6yo Billy that was in perfect, prime health. The carcass was beautiful. Every time I’ve ever killed a healthy 6yo Buck or bull the meat has been incredible. The mountain goat fooled me-it looked like it should’ve been 4star but was the opposite. We first cooked the tenderloins- you couldn’t chew them and they tasted very funky/rutty. Tried the back straps and steaks next-same thing so I took all of it to a game processor and had them make it into sausage/meat sticks (embarrassing). The Billy and the memories of the hunt were incredible enough to last a lifetime so since I consider them almost inedible I won’t try to get another tag
I killed a 9.5 year old in 2015, it was a little tough but better than any deer I have ever shot, flavor wise.

We turned all of mine into jerky and breakfast sausage and it tasted great! I would imagine during the rut would be a different story. Definitely has a unique taste that's hard to describe. My brother killed one in 2017 on November 11th and the dog wouldn't even eat it.
I shot mine on 10/6. He and the other 4 billies he was with weren’t rutting yet. I also expected my goat to have an odor about him especially when I saw those big glands behind his horns and his big ol nutsack…but he was the most odorless big game animal I’ve ever killed. Smelled like granite. I was dumbfounded by the poor eating experience. Nonetheless he was one of the prettiest animals I’ve ever killed, in one of the prettiest places I’ve ever been. I was very impressed by the body size and build of the animal-very unique and much larger/heavier than I had expected one to be. The first time I saw a goat, I decided I wanted to kill one more than a bull moose, ram or trophy bull elk-so it was definitely the trophy hunt of my lifetime with no regrets. I wouldn’t feel good about killing another one though.

I honestly don't know if I'll apply for them again when I'm done with the 7 year time out. Lord knows I'll draw another one when I'm 80 and I'll be too broke down to do the tag justice. Would rather save it for some young buck.

Sounds like you just got spoiled meat.

They do stink to high heaven. I've never killed one during the rut but there was a time in Montana where you weren't required to keep the meat (for particular reasons). I Killed mine early on and it wasn't awful...but I'd much rather eat elk or antelope.
 
Yeah agreed. I hunted MG with my father in law (his tag) and he killed a billy. A friend did some magic and canned the meat. It ended up being incredible. But can’t say how the steaks or ground was.

It definitely wasn’t spoiled and did not become spoiled. Broadside heart shot, DRT, no entrails punctured. I had quarters back straps hung in the shade to cool overnight w/in a couple hours of killing it. Had quarters and back straps on ice by noon the next day thanks to my horses. I’ve killed quartered and packed out of the backcountry many, many elk. Butchered hundreds of deer and elk-the only ones that were bad were shot by someone else in the guts and/or hung for too long in the wrong spot, in the wrong temps. My mountain goat looked and smelled delicious, it would’ve been delicious had it been an elk or deer. Quarters were taken care of perfectly. Nonetheless the goat was inedibly tough with a flavor that was foreign enough to be off putting. My dogs even spat theirs out and they ain’t picky. If someone had given me a piece of my goat and said, ‘try this and guess what new animal you’re trying’, I would’ve enthusiastically tried it then spat it out and guessed wolf, grizzly bear or hyena lol. I would never shoot another one because of this eating experience

Might’ve also guessed 20 yo buffalo based on the chew factor but it didn’t taste like any ungulate I’ve ever eaten
