I spoke with Pete Denney at Brushy Hill this morning. He says he has two large chest type freezers for meat storage that we are welcome to use. He also says that there are two facilities in Sabinal where meat can be stored either whole or quartered (the freezers will only take quartered game.) One of the storage facilities is a taxidermy shop (Creative Taxidermy) and the other is a new meat shop with a cold locker in back. So draggin a goat carcass to Brushy Hill shouldn't be a problem.
