Jack rabbit - Hank Shaw Recipe

I went out this weekend after bobcat and pigs, but got skunked.

Mid-day Sunday I noticed two medium sized blacktail jackrabbits coming out of the brush about 240 yards away while I tried to call a bobcat in, and I decided right there it was time to eat one of these things after reading how delicious they can be braised.

One squeeze on the 243 and the hare was down. I lost the two front shoulders from the shot but the straps and hind legs were perfect.

I made Hank Shaw's Sardinian Hare Stew (http://honest-food.net/2010/02/11/hare-stew-hard-times/) and the house smelled amazing.

I followed his recipe until it came time to simmer for 2.5+ hours, and put the pot in the oven at 325, a perfect simmer. It came out amazing. The capers really smell amazing and the flavor profile is perfect. I didn't take pics, but came out just like the pic from Hank's website. I put water up to 3/4 the thighs and let it roll for 3 hours in the oven.

These lil guys are in trouble the next few months as I ramp up turkey scouting and hog hunting...

Also got my truck good and stuck a few times...

I'm guessing you probably get a decent amount of meat off of one of those. They look huge compared to a cottontail. Glad it was good to eat.
 
We ate a number of them when we lived in NM. We took quarters and back straps and pressure cooked them to make them tender. My wife shredded the meat and made enchiladas out of it. You would be hard pressed to tell it from beef. It had exactly the same consistency as beef when done that way.

Glad you discovered how good they are.
 
Oh, I have been wanting to make that recipe for years and cannot find a jack rabbit or snowshoe hare to save my life! Glad it was a good as his recipe looked. I saw a tv show where he fixed it al fresco right after his hunt. Had my mouth watering. It is amazing what I put my poor FJ through sometimes to bring home a couple of rabbits or squirrels, not to mention antelope, deer, elk, etc.
 
My friend and I would shoot jack rabbits years ago. I thought my friend was nuts, until I ate them with him and his wife ( I was single at the time and a home cooked meal was always good.) she would boil them and take the meat off the bone and use it for rabbit pot pie. Very delicious. Good luck on your cooking.
 
I made that recipe with snowshoe last night. I went a bit over on the capers and will stick to the recipe next time. But super tasty nonetheless.
 
I have not used that recipe, but we ate a number of New Mexico jackrabbits. We just took the quarters and back straps like I do big game. They were all put in a pressure cooker and the meat was cooked off of the bone. They were then shredded like beef and used in enchiladas. If you did not know that you were eating rabbit, you would have thought that you were eating beef.
 
if it can make turkey legs taste good then it must be a good recipe. I need to give it a try, the jack rabbit numbers are getting crazy out on the flats! son and I have a tradition of rabbit shooting on thanksgiving day, I think we will keep a few of the jacks and give it a go, thanks! recipe off of that meat eater tv show looks pretty all right too.

Well, I didn't have any jackrabbit, so I figured turkey legs would approximate the stringy jackrabbit texture I remembered. I think the long, slow cooking time really softened it up. My wife liked it and she's picky, I'd do it again...
