If you reload, essentially the sky is the limit.
I do load the 100gr Sierra HP Varmint bullet in my 7mm-08AI, 284 Win, 280 Rem, 7mm Rem Mag.
For heavier bullets the standard 1:9-1:9.25 twist will handle all but the heaviest bullets.
The problem with the heavy bullets in the 7mm-08 is the bullet length and the available case capacity.
Namely that the long heavy bullets intrude into the powder column if you don't throat ream the chamber to seat them out further.
That and the case capacity is on the small side for the heavy bullets. You'd be better off going to the 284 Win or 280 Rem.
Handloading also lets you do the wildcat and obsolete cartridges.
Wildcats like the 27-08, 25 Souper, 25-350 Rem Mag, 25-284, 7mm WSSM.
Obsolete cartridges like 250 Savage, 257 Roberts, 25 WSSM, 7mm WSM, 7mm RSAUM.
