My grandson and I headed into the colorful hardwood forests of State Game Lands within Pennsylvania at about 8:15 AM. We spotted several squirrels over the space of 1.5 hours but none presented a clear shot. We were sitting on a log quietly watching for movement when this squirrel hopped into shotgun range. But he kept his cool and made a good shot at a distance of about 30 yards. My Grandad's old 16 gauge did the job! I am very proud of this young hunter!
This is how we fixed the squirrel:
- skin out the back legs
- remove rear legs and cut off the feet
- wash with cold water
- set the meat in ice water for about 30 minutes to remove body heat
- place the legs in a mixture of buttermilk, one mixed egg, and garlic salt
- remove from mixture and roll in flour until well coated
- fry in oil until done
- enjoy!
