High of 52 today. I took the opportunity to make a pot of gumbo.

The trinity and the roux.

Add the trinity.

Chicken stock and spices, then add the smoked chicken thighs. Simmer for a couple of hours.

After the chicken is fall apart ready, pull it out and shred it, throw it back in. Add the andouille and okra, simmer 20 minutes then add the skrimps, as @rtraverdavis calls ‘em.

Ready for white rice and some Crystal hot sauce.
 
Buddy of mine made some gumbo for our annual January Arizona trip a couple years ago. It seemed crazy at the time until we got down there and had 6 inches of snow and freezing temps. It was amazing camp soup that night
 
High of 52 sounds great. Was well over 100 today putting railroad tie boarder around the landscaping. The food looks great as well.
Too hot for that crap! Rode the Harley to my nephew's graduation party today and wore my chaps and do-rag to try and confuse the family. They didn't know I had it. Definitely lost some liquid today!
 
Anyway. I haven't made gumbo for quite a while. That sounds pretty good!

Dude! :ROFLMAO: That's just cold! Yeah, everyone always sees me in jeans and a t-shirt with cowboy boots. With this long hair the do-rag helps with Bozo head and I turned my fox tail ponytail into a rat tail with more ties. Hard to run a brush through it after riding a bit. Definitely confused a few people when I came roaring in. Daughter was pissed(ish) that I never told her I bought it. In April.
 
The gumbo looks and sounds great. The weather sounds even better! Hot and humid here. Can't wait for 50 degree days but months away.
 
Looks great! I made one last week but didn't have okra. I wasn't going to the store and the garden okra just isn't ready yet but it was missed. Actually ordered a Magnaware pot (those oval cast aluminum pots that come standard in every cajun kitchen) last week that should be here any day.

HAHAHAHAHAHA.....soup! Its gumbo not soup. In Louisiana those are 2 different things, soup and gumbo.

My wife the cook would approve with the okra in it. Looks great.
