I hunt deer as well as turkey. I understand the necessity to cool down big game meat as soon as possible.
Do you think it matters if you don't breast out a turkey for several hours?
For years we have breasted out our turkeys once we got home in the evening, sometimes this is 10 or so hours after the bird was shot. Many times the breast meat is still warm. We have never had any troubles when eating the meat after being frozen and thawed.
Monday, while cutting up the bird, I was thinking what happens to chcicken left on the kitchen counter all day!
So what are your thoughts on how quickly the turkey breast meat (or other meat) should be gotten out of the bird before any spoiling issues occur?
