Whelen Nut, here ya go. I got this recipe from a hnting friend in Arizona when I hunted quail with him. He'd killed a mountain lion a few weeks before, and took some lion meat from his freezer. Excellent meal!
MOUNTAIN LION PARMIGIANA
1 Lion cutlet
1 Cup Flour
1 Cup freshly grated Parmesan Cheese
1 Cup Milk
1/2 teaspoon dried Basil
1/2 teaspoon dried chives
Salt & Pepper to taste.
2 Tblsp. Butter
2 Tblsp. Fine olive Oil
I cup Italian Tomato Sauce
Slice cutlet into 2x2 inch squares and pound between wax paper until they are about 3" around. Dip into milk and then into the mixture of flour and spices. Then back into the milk and then again into the flour and spice mixture.
Heat oil/butter mixture in cast iron skillet.
Saute until crisp in the hot oil butter mixture, about two minutes each side. Top with the Italian tomato sauce.
Everyone will ask for seconds.
