Any of you guys can your fish? I recently found it it basically makes the entire fish edible, spine, head, fins etc.

Would like to do this…any recipes?
I've been doing

1/4 cup salt
3/4 cup brown sugar
Garlic
Onion
Worchestershire sauce
2 quarts water

Let that sir for about a day then I smoke them in my little chief smoker with cherry pellets for about 2 to 3 hours

Then I pack the fish into jars, I think the rule is that you can fill up to within an inch of the top of the jar. Put the jars in the pressure canner and heat it up, then bleed it for ten minutes. I think that's the term anyways. Basically let the steam run.
Then pressurize it up to atleast 15 psi for 100 minutes
 
Oh and I put some lemon juice in the jar before I put them in the canner
