I am a Forchner fan for about 12 years, they hold great edge!

I use Forschner boning knives. I have two that are probably 20 years old and they still hold an edge.

I knew there was potential there, and this used to be Moosie's, but former meat cutters don't usually make that connection. Thank God!!
