Bullet Selection

I got to try out my first 120 grain NBT out of my 7-08 yesterday morning. Only an example of one and a walking broadside shot, but really liked what I saw. I'll keep using them until they turn on me.
 
How is it that meat damage is always a consideration, when most like to shoot through the lungs? I will take a drt deer anytime, over worrying about losing a couple pound of shoulder meat. Don't shoot them through the hind quarters, or back straps and don't worry about losing some of the rest.
 
I think the consideration usually goes one right next to another. I know that my two animals shot with my '06 through the shoulder with a ELD-X dropped in their tracks. However, one of them was a quartering away shot and blasted the heck out of the off side shoulder. Trimming around the exit wound is sad to me, but I did put a perfect shot on the animal for an ethical kill. There are normally tradeoffs with this sort of thing.
