Mine are Tombstone (any Doc Holiday scene), Deadwood, the Coen Bros True Grit.
 
I've got two, Tombstone, and Open Range. However, given the current situation in Nevada maybe I shouldn't admit to the latter. ;)
 
Anything with John Wayne

There are a lot of good modern westerns but I am more partial to the classics. The only shows my grandpa would watch, were classic Westerns and old war movies. I spent hours growing up watching John Wayne. My personal favorite is "The Man Who Shot Liberty Valance." You can't go wrong with John Wayne and Jimmy Stewart. I also love Eastwood in "The Good the Bad and the Ugly."
 
Lonesome Dove. if that qualifies since it was a mini-series. if not, Open Range.

Open Range was good, but I never knew they made six-shooters that held unlimited cartridges. :D
