Antelope Tenderloin

No, I don't know how antelope tenderloin survived a year in my freezer, but it's still tender and delicious! So, I cooked it on the skillet tonight with red onion, red potato, red bell pepper and mushrooms... YUM! Accompanied by Indian Wells red blend. Very nice evening meal.

We hunt mule deer in the morning, and late in the afternoon. In between, we see if we can stalk antelope!

I don't remember if that buck was mine or my hunting partner's buck. If it was mine, here's a photo:

Looks good. My tenderloins never make it long enough for a photo, much less a year!
