7mm08 140BT for elk?

Ballistic tips have been devastating on 2 mule deer with my 308 win at 250 ish yards.

Understand the minimum expansion velocity (think 1800 fps is right for those?) and establish a safe buffer from that and you're good to go. Likely you'll get a range a lot further than you want/will/capable of shooting.
 
Not my first choice, but put in the right place (just behind the shoulder) should work.

On my first South African hunt I used a borrowed 7mm RM with 140 gr Ballistic tips I had one shot kills on several animals including a Kudu, Blue Wildebeest, and a Gemsbok.

I shot one pronghorn antelope once with a 115 gr BT bullet from my .257 AI. He was runnning away and that bullet did a lot of damage to one ham.

A 117 gr Sierra GameKing bullet from my .257 AI dropped my 2nd best 6x6 bull elk dead in his tracks for one of my quickest elk kills. The bullet hit a rib going in and bullet and bone pieces shredded his lungs and heart and didn't cut the rib cage on the other side.
