I was able to get a round into this big fella from 402 yards last year in some steep and deep stuff in Ventura County. After a fun retrieval I ended up with some of the sweetest avocado laced meat I have ever had. Unfortunately you have to cook bear well done, otherwise I would have had 100lbs of steaks. The burgers from this guy will melt in your mouth...

I am primarily a bowhunter, but this last year I have gotten into rifle a little more after a 20 year hiatus from the boom stick and am loving it...

I also attached a shot of a boned hind quarter and the area where the shot was, little red x was where he was.

Pretty new around here, looks like a great place.

Good stuff, a "guaco-bear" from Socal is on my bucket list.

As for the steaks trichenella spiralis dies in 6 minutes at 131 degrees and in 1 minute at 140. So if you have an immersion cooker you can set it at 130 for an hour and be good. I do beef steaks at 125 for an hour the sear over charcoal to finish.

You just blew my mind! I will have to look into this, I love cooking wild game almost as much as going to get it in the woods. This bear is now only a few small packages of burger and/ breakfast sausage but he has friends out there that I am looking for. The next one will come home in steaks!

Immersion cooking is a fun way to cook things without cooking the hell out of them. I just picked up an Anova brand cooker and so far have done an Spinanch/Artichoke stuff Pork loin which was quickly destroyed by coworkers at a pot luck. I would try to do Corned Bear in similar fashion if I were you.

I lived most of my life north of there in SLO county.
Saw some huge bears in hot dry places.
Gordos from the avo's ,barley & acorns.
Same with hogs.
